Which type of restaurant do you lean towards: one that keeps experimenting with new, surprising dishes, or one that perfects familiar favourites?

Budapest's Tranzit by Flow has closed for good after a year and a half — the bistro, known for its experimental kitchen and specialty coffee, couldn't build enough regular customers.
